Because the chimney isn't pulling air upward strongly enough to carry the smoke out. That weak "draft" can come from a blockage, a bad damper, a flue that's the wrong size, a chimney that's too short, or downdraft from wind and rooflines. The good news is each of these has a specific fix once we identify which one it is.
Wet or unseasoned wood does make more smoke, so it's worth using dry, seasoned wood. But if you're burning good wood and still getting smoke in the room, the problem is almost certainly the draft, not the fuel. That's when it's worth having the chimney looked at rather than blaming yourself.
Wind hitting the chimney at the wrong angle, or nearby trees and rooflines, can push air back down the flue instead of letting it draw up. This is a classic downdraft, and it's often solved with the right cap or a specialized draft guard. Intermittent smoking like this is a strong clue we use in diagnosis.
